Metropolitan Pub Company to open its 77th venue
The London-based operator has taken a Grade II-listed Georgian building on Milsom Street, which has been home to a bank and a Loch Fyne restaurant previously, and will open the venue with nine hotel rooms on Tuesday (2 May).
As part of its strategy to increase its national footprint, the pubco recently acquired three sites in Glasgow – the Ubiquitous Chip, Stravaigin and Hanoi Bike Shop – and has also opened Langbourns, a conversion of Loch Fyne City, as well as gastropubs the Anchorage in Poole and Little Rose in Cambridge during the past 12 months.
Bespoke cocktail menu
The drinks offer will feature wines from around the world and a bespoke cocktail menu including Dolce Vita Spritz – amaro santoni, prosecco and soda water; Flower Market Sour – Hendrick’s gin with lychee liqueur and a Darjeeling and jasmine syrup topped with lemon juice and prosecco; and Rum Dance – Havana Spiced Rum, Bacardi carta blanca, watermelon syrup, lime juice, vanilla and topped with pineapple juice.
Food will consist of a modern classic menu with snacks and sharing dishes as nibbles then starters such as Crispy Lamb Belly with cherry molasses and pea salsa verde, and mains including Tiger Prawn Linguine, Aged Ayrshire Pork Cutlet with Truffle potato and a carrot and apricot chutney, and classics such as fish and chips and burgers plus desserts.
Classic fabrics
Meanwhile, bedrooms will use classic fabrics, polished chrome, plush velvet and a rich, warm colour palette and include “striking” en-suites.
There has also been an overhaul of the ladies and gents washrooms with the ladies enjoying a coral pink fish scale, raw edged wall tiles, while the gents will receive an olive green version.
