Ashton plans to implement menu of "contemporary European" flavours
Columbo Group pub Paradise By Way Of Kensal Green has appointed a new head chef to oversee the site’s food offer.

Incoming chef Cat Ashton worked previously as head chef at Petersham Nurseries and plans to introduce “contemporary European” flavours to the West London venue, which has a 100-cover dining room and 30-cover private dining room.

Some of the dishes Ashton reportedly plans to introduce include stinging nettle and ricotta ravioli with Sicilian olive oil, baby monkfish wrapped in prosciutto with pearl barley risotto, wild garlic and spinach and slow roast lamb shoulder with parsnip puree, Swiss chard and red wine jus.

Ashton said she was looking forward to evolving the Paradise’s kitchen and continuing its commitment to “thoughtfully sourced, high quality and honest food”.

Columbo Group was named as Best Late Night Operator at this year’s Publican Awards. Its portfolio includes Paradise By Way Of Kensal Green and five other sites including XOYO in Old Street and the Nest in Dalston.
