Brewer and retailer Hall & Woodhouse (H&W) is set to open a £3m flagship development in Bath on Wednesday 2 June.

The company is opening an ambitious three-storey development, called Hall & Woodhouse, in the former Bonham's auction house site — a freehold site the company acquired a couple of years ago.

It will offer a bar and deli on the ground floor, called Pantry & Common Room, an urban dining room on the first floor, called the Dining and Games Room, and a roof garden on the second floor — it will have 340 covers over three floors.

Hall & Woodhouse head of food Alec Howard said: "Everything we do at the site will be authentic, using the history and heritage of Hall & Woodhouse to inspire it.

"We'll be baking our own bread, cakes and pastries for example, with nearly everything made fresh on the premises.

"We've got quite a lot of experience in high-end food, but this is very different — it's a new direction for the retail division at Hall & Woodhouse.

"We've looked at the Bill's Produce store concept (in Brighton and Lewes) and the Danny Meyer sites in New York — we've incorporated elements from some of these, but in a very Hall & Woodhouse way, playing to our strengths."

Hall & Woodhouse has developed considerable high-end food expertise over the past few years — it has eight managed pubs that operate in a gastropub format it calls Olive Branch internally.
