Alan Edmeades, product marketing manager, M&J Seafood: Under-utilised and sustainable, albacore tuna is line caught off the South West Cornish coast. A less familiar species of tuna in the UK, it is smaller than the better-known yellowfin.
Yielding smaller loins, it offers a different presentation as they can be seared and sliced like a pork loin. Albacore gives a comparable meaty taste and texture to yellowfin, but is much lighter in colour and is known in other parts of the world as 'white tuna'.

Runner beans are a perfect vegetable to serve alongside a traditional Sunday roast. Slice the beans diagonally and cook in boiling water until tender.
John Martin, product marketing manager, Prime Meats: Pork fillet, sometimes called tenderloin, is a fantastic cut that is often underrated. It can be roasted whole, cut into strips and stir-fried, flattened into escalopes and shallow-fried or grilled with a breadcrumb coating, or even barbecued. Whichever way you cook it, its short cooking time offers publicans a quick and easy dish to serve.
Although it's probably the most expensive cut of pork, compared with beef or lamb it's incredibly cheap - a real bonus in the current climate.
