Greene King has been fined a total of £14,015 after pleading guilty to seven beaches of food hygiene laws at a Shropshire pub.

Environmental health officers from Telford & Wrekin Council carried out a routine inspection of the Cuckoo Oak in Madeley, Telford, in June last year.

At Telford Magistrates Court, Greene King was fined £2,000 for each of the seven offences, with the magistrates also imposing a £15 victim surcharge.

The offences under food hygiene laws included:

  • failing to keep food premises clean
  • failing to maintain floor surfaces in a sound condition
  • failing to keep articles with which food comes into contact clean
  • failing to keep articles with which food comes into contact in good repair and condition
  • failing to make adequate provision for the storage and disposal of waste
  • failing to ensure adequate procedures to control pests were in place
  • failing to maintain appropriate verification measures for their food safety management system.

Greene King also accepted a formal caution in respect of two further offences. The company had agreed to pay the council's costs of £4,910 prior to the hearing.

Tom Redwood, operations manager for the Cuckoo Oak, said: "This happened several months ago, we accept the findings and would like to apologise to our customers.

"We would like to stress that immediate action was taken back in June 2007. A new management team was instated, a deep clean took place and much of the equipment was replaced.

"In addition, there was a complete overhaul of hygiene procedures with staff training immediately refreshed. As a result, we secured a 'Good' rating in the council's own quality standard rating in December and are working closely with them to ensure the standards are kept continuously high."
