Moving from Hell to Paradise
A former executive chef for Marco Pierre White is to head up a new London gastropub.
Tim Payne, who was executive chef for Marco Pierre White restaurants for seven years, is to head up the kitchen at pub company Columbo Group's fourth outlet Paradise by Way of Kensal Green. The chef is also currently appearing in Marco Pierre White's Hell's Kitchen on ITV.
Columbo bosses Steven Ball and Riz Shaikh also own the Old Queens Head, in Islington, the Queen Boadicea, in Clerkenwell, and the Westbury, in Kilburn. Tim also worked for Robert Earl and more recently was a consultant for Oliver Peyton restaurants.
The dining room menu at Paradise is priced from £4.95 for starters, £10.50 for mains and £5 for puddings. Dishes include vermicelli with Cornish crab, pomello and chilli; potted ham hock with salad of shallots, capers and watercress and roast Goosnargh corn-fed chicken, pearl barley and vegetable bouillon. Isles of Scilly native lobster with sauce vierge and chips will be offered for £27.50. There is also a bar menu that features slated baby squid in chorizo and lemon, and coriander chicken skewers.
The pub seats 80 covers in the dining room and 50 in the bar. There are also two private rooms which will host live music and entertainment including burlesque shows, cabaret acts and acoustic bands.
