Farmer becomes a farmer
Licensee and owner Phil Farmer has been at the pub for the past 15 years, during which time he has extended and developed the business, which now turns out an average 1,000 meals every week.
Like most good gastro operators, Phil
relies on local food sourcing for inspiration.The vast bulk of raw materials is delivered to the pub by local farmers and suppliers, but the Cook & Barker has recently taken the art of local supply one step further.
Phil has gone the extra mile and just
forked out for his own working farm, complete with livery, outbuildings and numerous cottages.
From farm to pub
In due course, he plans to source his own organic beef, lamb, and rare-breed pork, plus organic vegetables and fresh game.
Phil explains: "It's a big project and we are only at the beginning. But in time, I want serve my own produced meat at the Cook & Barker, and develop the business to supply other pubs and restaurants in the area."
Awards boost trade
The pub's menu is comprehensive, with a large choice of fish and meat dishes, plus a separate grill and roast section. A special dinner for two offer operates on Sunday, Monday, and Tuesday evenings offering three courses for £38 per couple.
Awards, accolades and guide book entries have been heaped on the pub over the past few years and helped push turnover beyond the £1.3m mark.
Phil adds: "We try and cater for all tastes, and while the food is obviously a high point, we never lose sight of the fact that we are still a pub."
