Apuro gets a pizza the Whirlpool action

Apuro has been appointed the UK's principal distributor for Whirlpool commercial appliances and is now distributing the new Whirlpool 700 Series professional cooking collection. The 700 Series has been designed for medium-sized kitchens and small catering services and includes commercial ovens, tilting bratt pans and deep fat friers in gas and electric models. Apuro has also launched Whirlpool's new SmartCook pizza oven that cooks pizza in 90 seconds. The company claims that the enhanced convection oven produces a pizza that looks and tastes exactly as if it was cooked in a traditional wood-fired oven.

Two new larger models have been added to the Apuro Quattro range of heavy-duty planetary mixers - the QPM30 and QPM40 mixing bowls have a 30-litre and 40-litre capacity, respectively.

Intelligent refrigeration controllers from Williams

Williams Refrigeration has brought out its new energy efficient "intelligent" CoolSmart refrigeration controllers. Williams says that the controllers have been designed with smart technology to reduce energy consumption by up to 15%. CoolSmart controllers detect "peak times", such as when warm products are placed in the refrigerator or when doors are opened and shut frequently, and "economy" periods, such as overnight, when temperature changes are infrequent, and automatically switch to different control parameters. The controllers have also been designed to eliminate unnecessary compressor start-ups to reduce wear and tear and prolong compressor life. Williams also says the controllers have an intelligent defrost system that initiates automatic defrost only when the system needs it.

Keeping cool over clean glasses

Winterhalter has put in a brand new "cool rinse" option for its GS 200 and GS 215 back-bar glasswashers. It says that the new cool machines overcome the problem of serving drinks in hot glasses in busy bars, without compromising on hygiene or wash quality. The final rinse can be switched immediately to a cool rinse at the push of a button to quickly bring the glass down to a ready-to-use temperature, and once the rush is over, the rinse temperature can be reset for conventional fast drying.

Cooking pig is no longer a bore

Rational has updated one of the oldest cooking techniques around - the suckling pig spit roast. Traditionally it takes hours and requires constant supervision, but with Rational's new Suckling Pig Spit all you need to do is put the pig - up to 10kg - on the spit, put it in the Self-Cooking Center oven, and push the relevant programme button and, in as little as two hours, your pig should be perfectly cooked.
