He is not the purist you might imagine: he just likes food that has integrity and, at the end of the day, the test is whether it is delicious or not. He's not afraid to roam around the world and his recipes are a model of restraint and good taste."

Indian Cookery - Madhur Jaffrey - "This was her first book and it is a brilliant introduction to the complexities of Indian cookery. The writing style is highly prescriptive, which I like, and every recipe is a winner - her 'Shakoothi' Goan chicken curry with roasted coconut) is one of my favourite all-time things to eat. Stunning, light and fragrant."

Marcella's Kitchen - Marcella Hazan - "This is my favourite Marcella Hazan book. All of her books are brilliant but this one is the most personalised and contains many of her personal favourites. Her basic message is 'be true to the flavours of the dish - by all means improvise but do not strain for originality for the sake of it'."
