Award winning chef takes over Wiltshire pub
Pub Food Award winning chef Paul Morgan has opened his new venture, the Shears Inn and Country Hotel in Collingbourne Ducis, Wiltshire.
After five years as chef and licensee at the Hampshire Arms in Farnham, where Paul picked up accolades including the Chef of the Year title in the Pub Food Awards, Paul has moved on to a Brakspear lease at the Shears Inn.
Paul said: "I was extremely flattered when Brakspear approached me in recognition of the dedication, hard work and many seven day weeks that I had put into building the Hampshire Arms into one of the top gastro-pubs in the country.
"I'm delighted to have become leaseholder of the Shears Inn. This is a local pub in the heart of the Wiltshire horse-racing community, already well known for its ambience and hospitality but on its knees in terms of its food offering.
"My aim is to turn this business round to become an establishment of quality in both food and accommodation as well as the local watering hole". Paul Morgan will be taking part in a special Pub Food panel debate at this year's Publican Conference on November 3, looking at how pubs can work with suppliers to create a strong individual food offer.
