Former pub managers Tina and Paul Stevens have just taken on their first tenancy with Everards.

The Greyhound, at Burton on the Wolds, near Loughborough, Leicestershire, is described as a traditional village local with a group of regular real-ale drinkers making up the core trade. The couple are keen to up the quality of the fare served in the pub's restaurant - but are conscious that going overboard on their offer could alienate their newly-acquired regulars.

She said: "We're keen to offer people a nice place to drink and they can order food if they want - but we certainly don't want to turn their beloved local into a restaurant. Everybody has been really friendly and welcomed us and it's going really well - we've only been here for a few weeks."

Tina oversees the front of house and Paul heads up the kitchen, which will offer a menu of traditional pub grub with an emphasis on game, when in season, and fresh fish. The pair, who boast a combined 30 years' experience in the trade, were most recently behind the bar at the Boot, in Soulbury, near Leighton Buzzard, Buckinghamshire.

The couple hope to boost turnover to £9,000 a week and said that the pub had been under-trading and had not served food over the Christmas period.

Tina and Paul praised Everards for its support in helping to get the pub up to scratch. Tina said: "It wasn't in a great state, we've had to redecorate and Everards have helped us with the cost."

The pub offers a good range of real ales, most of which are from the Everards stable.
