Life in a pub kitchen can be hectic:

PEDRO APARICIO, LICENSEE/CHEF, THE CANAL INN, WRANTAGE, SOMERSET

"We've got a large beer garden so if I lose my rag I'll go out and hit whatever object is closest.

But the most effective remedy for these outbursts is to have a good team who are skilled at their job. The right choice of employee can make an incredible difference to how smoothly your business runs. There's nothing more annoying than an employee who is incompetent and has a lack of care towards his or her job.

To avoid ending up with these problems we try to make our interview process as thorough as possible. We look out for staff with a good track record or an obvious enthusiasm for catering. And if a member of staff performs well then we attempt to show our appreciation towards them. We take our team out for a meal and a few drinks once every month. We want people to relax and have fun because they've earned it.

However if you still end up stressing, then remember it's not a good idea to hit the bar. I opt for plenty of mineral water instead, and it seems to have a calming effect."
