He said: "The pub is a British institution and in the last ten or fifteen years the pub has had to evolve... fine dining is changing and that might have been spearheaded by the pub movement."
A vocal advocate of of Bristol and Somerset's food, this year saw him star on BBC2's Great British Menu for the second time, winning the South West regional heat.
He also opened a standalone fish & chip shop, the Salt & Malt on Chew Lake, near the Pony & Trap and took on the role of guest chef for Bristol Sport throughout the Rugby World Cup.
