The residency is Fowl Mouths' first and was led by head chef and founder Melissa Thompson, who has developed dishes that fuse Japanese flavours with classic British-American comfort food.
Signature dishes include twice-fried karaage chicken with a wasabi coleslaw and ponzu steak marinated in citrus-seasoned soy and garlic.
Other daily snacks to feature on the extended menu will include crisp panko-crusted potato korokke; teriyaki chilli wings; eight-hour braised miso short rib; pork belly Benedict with poached eggs and yuzu hollandaise; egg and bacon bun with tonkatsu brown sauce; and molten chocolate sesame balls.
Introduction
Thompson launched Fowl Mouths after her sister-in-law introduced her to Japanese food several years ago.
On the menu:

- Karaage chicken with wasabi coleslaw £10
- Ponzu steak £13.50
Her inspiration comes from her extensive travels around Japan.
Thompson said: "I've been blown away by the customers' response to our food at the King & Co. It's been busier than I could have ever hoped for and I've had great fun serving our Japanese comfort food and creating daily specials.
"Now we're staying in the pub's kitchen until the end of March we'll have even more time to try out new dishes and I look forward to feeding even more people."
Wines and craft beers
The King & Co launched in September 2014 and sells various wines, spirits and craft beers.
Its overall food aim, following the launch, was to provide something different to the competition and, as a result, the pub has hosted many street food vendors and pop-up chefs including the Cheese Truck, Vinn Goute, Miss P's Barbecue and Donostia Social Club.
Meanwhile, sales at Ilkley, Yorkshire, pub the Yard have increased by 50% since the pop-up Twisted Burger launched there in early February, the brand's head chef Alex Milan told the Publican’s Morning Advertiser.
Yet, Milan believed the Yard's food sales could rise by as much as 300%, a figure achieved at the brand's first site, the Harley, Sheffield.
