Michelin chef Tom Sellers' re-opens former pub of DJ Chris Evans

The new pub of Michelin-starred chef Tom Sellers opens today (12 December).

The Lickfold Inn in Lickfold, near Petworth, West Sussex, was previously owned by DJ Chris Evans.

Sellers, who has a Michelin star at his restaurant Story in London acquired the pub in May. Sellers CV includes working with Tom Aikens, two years at Per Se in New York under Thomas Keller and Noma in Copenhagen. Tom’s career started at 16 working in a pub.

He opened Restaurant Story in 2013 which gained a Michelin star only five months after opening, when Sellers was just 26. The Lickfold’s head chef is Graham Squire, previously of London’s Trinity and Bistro Union.

The menu features five starters, mains and desserts. Starters offer chicken, Earl Grey and prune terrine(£12); mussels, cider and lovage (£8); deer ham, moss salted beets and tarragon (£11) and spiced pig with blood pudding and onion piccalilli (£9).

Mains offer buttermilk cod with cabbage and pumpkin (£20); pork belly, burnt pear and mead (£19) and ox cheek, buckwheat pie and oyster (£22). Desserts include burnt apple soufflé with brandy and prune (£8), fig leaf with damson custard tart (£7) and lemon and honey (£8).

The site will function as a traditional pub on its ground floor, offering a selection of craft and local beers as well as a range of cocktails and bar snacks such as Scotch eggs and pork pies.

A dining room on the upper floor will open for lunch and dinner Monday to Saturday and lunch only on Sunday, with seating for 36. Sellers said the pub would be “modern and independent” but with “traditional values”.
