Make the perfect El Diablo

The English translation of El Diablo means Devil, but this tequila-based cocktail is an angel to make and is a refreshing quencher in the summer.

Make the El Diablo:

Glass: Highball

Ingredients:

  • 40ml reposado tequila
  • 20ml crème de cassis
  • 15ml fresh lime juice
  • Ginger beer

Garnish: Lime wedge

Method: Half-fill the glass with ice and add the tequila and crème de cassis. Stir gently with a bar spoon. Top up with ginger beer and add the lime wedge.

Tommy’s Margarita

Glass: Tumbler

Ingredients:

  • 50ml reposado tequila
  • 25cl fresh lime juice
  • 12.5cl agave syrup

Garnish: lime wedge

Method: Twisting a classic cocktail doesn’t have to make it harder. This takes its name from the San Francisco Mexican restaurant where it was created in the 1990s and substitutes the normal orange liqueur with agave syrup – available from Funkin or foodservice suppliers – to accentuate the flavour of the plant that tequila’s made from. Just shake the ingredients over ice and strain.

Tequila Sunrise

Glass: Highball

Ingredients:

  • 50ml tequila
  • Orange juice
  • Dash of grenadine

Garnish: Orange slice and a maraschino cherry

Method: A refreshing crowd pleaser. Pour the tequila on to ice in the glass. Top up with orange juice, then pour the grenadine in slowly down the side of the glass to create the two-tone red-orange finish.
