We also explored other cultural influences shaping the sector, speaking to Ayesha Kalaji from the Queen of Cups who's brought a Jordanian flavour to her business. Scandi themes are also popular, so we caught up with Egil Johansen from the Kenton in Hackney to find out how he's bringing a taste of home to London's hip streets, and it's not just a giant moose head either.

And we spoke to fantastic operator Keris De Villier who runs London pubs with a South African twist, and of course co-host Heath Ball was on hand to share his Australian cultural references as well....
