A former police station is set to open as a leading London pub operator gears up for its third drinking and dining destination site.

The Hound, in Chiswick, is the third offering from the combined talents of Dominic Jacob and JKS Restaurants, building on the success of it’s two stand out previous operations, the George in Fitzrovia and the Cadogan Arms in Chelsea.

Described as a modern-day coaching inn, the Hound will open next Wednesday (17 July) and is housed within the walls of a historic Victorian police station. The new site will feature  “a bustling pub floor, an inviting reception room, two private dining rooms, a covered outdoor courtyard and a south-facing front terrace, and will be open for lunch, dinner and bar snacks seven days a week.” 

The main private dining room seats up to 18 guests and features an exposed brick ceiling from three combined former prison cells, paying homage to the building’s storied past. 

A further two former cells are also being used to house two wine cellars, with the original jail bars and prison doors kept in place. An outdoor courtyard featuring a retractable glass roof will ensure alfresco dining will be available year round.

Live sport screenings will be shown on TVs throughout the pub and courtyard, with the private dining room at the back of the pub, dubbed ‘The Green Room’ benefiting from a large projector screen perfect for group viewing. 

Alongside the pub operations, the pub will also provide accommodation, with four boutique guest rooms set to open in August to round off the business.

Food is being created by executive chef John Sparks who will work alongside culinary director James Knappett of two Michelin-star Kitchen Table in Fitzrovia, and will see a diverse menu inspired by British pub classics, drawing on favourites from its sister sites, including a black pudding scotch egg, buttermilk fried chicken.

Further signature dishes exclusive to the Hound will include grilled red prawns with chilli and garlic gremolata and focaccia, and salt cod croquettes with lemon aioli and coriander.

Beers on offer will include established products alongside craft ranges including Sambrook’s Brewery and a bespoke Morhoch Cornish Pilsner created by Cornwall’s Harbour Brewing Co. will be served alongside local cask ales and “perfect” pints of Guinness the operators said.  

Dominic Jacobs, managing director said: “We are excited to be taking over this historic site in Chiswick, it has long been a cornerstone of the local community and we hope that it will continue to be one, offering a welcoming space for socialising whether for a drink, meal, special occasion or overnight stay. 

“Both The Cadogan Arms and The George have embedded themselves in their respective local communities over the past three years and are thriving as a result. It is with the same ambition we hope to launch The Hound.”
