Hey Palu, which is number 27 on the Top 50 Cocktail Bars List, co-owner Alex Palumbo shares how to make the venues Wild Strawberry Negroni (22% ABV).
Bitter and herbal notes
Palumbo said: "[This Wild Strawberry Negroni] has all the bitter and herbal notes of the classic Negroni but with a soft strawberry aftertaste.
"Cocktails [like this] are a way to offer the guests an alternative flavour profile as opposed to a wine or a beer."

Less is more
The bar sells around 40 of these "easy to make" cocktails per week, retailing at £10 per serve.
Palumbo added: "For all Hey Palu drinks we tend to have a 'less is more' approach.
"We live in a time where there are a hundred delicious vermouths, amaro, fortified wines, and spirits and we love to showcase how all these liquids work well together."
Let's get into it...
Equipment required:
- Mixing glass
- Bar spoon
- Strainer
Ingredients:
- 25ml Bitter bianco
- 25ml Gin
- 25ml Vermouth
- 1 Dash orange bitter
Method:
- Put all the ingredients together in a glass of your choosing
- Add ice
- Stir together until diluted
- Serve garnished with a fresh strawberry
