Master chef: Tiffany Long took home the title after competing in a live cook off at this year’s Great British Pub Awards

Competing in a live cook off, in a time-limited period, five of the nation’s top cooks battled it out for the title of Best Young Pub Chef.

In a close contest, Tiffany Long from the White Hart in Ashill, Norfolk was crowned the winner.

During the cook off at the Great British Pub Awards at Manchester’s Escape to Freight Island, she had to beat off stiff competition from four hopefuls.

Time-trial

These included Ellie Fitch-Goodwin from the Pityme Inn, Wadebridge, Cornwall; Albert Kingwell from the Kings Arms, Bexleyheath, Kent; Ewan Lawrenson from the White Cross, Lancashire, Lancashire; and Jack Cronin-Aldridge from JD Young in Harleston, Norfolk.

The five finalists had to select ingredients from a mystery box to create a show stopping dish in a limited time period in front of an audience.

They then had just 15 minutes to prep their dish and 35 minutes to cook it, while being watched over by the judges.

These included chef-patron of the Top 50 Gastropub the Freemasons at Wiswell, Steven Smith and head chef of the two Michelin-starred the Hand & Flowers in Marlow, Tom De Keyser.

Judging process

Dishes were tasted and judged ahead of the winner being announced during the awards ceremony later on in the day.

Tiffany created a stunning dish of pork chop with mushroom purée and garlic and thyme sauce that impressed the judges with its flavour and balance as well as Tiffany’s ability to remain calm under pressure.

Being head chef at the White Hart for less than a year, Tiffany was previously sous chef at the pub for two years.
