The Morning Advertiser has teamed up with Booker/Makro to find two chefs worthy of the Pub Chef of the Year and Young Chef of the Year titles at the GBPA on 6 September.
The Pub Chef of the Year award, sponsored by Booker/Makro, will go to the chef who is pivotal to the success of the pub’s food offer.
A winning chef will demonstrate they are skilled, inventive and that they have a clear strategy and story behind the food they serve. Finalists in this category will be invited to a cook-off competition before the winner is revealed.
Simple process
Round one of the entry process is simple, chef’s just need to tell us:
- What is your wet:dry split?
- What’s your cooking style?
- How you influence the menu?
The winner of the Young Chef of the Year award will be aged between 18 and 25, and should be able to demonstrate how they have evolved and grown their skillset, that they are taking on more responsibility and, above all, that they are ambitious and eager to develop their career.
Finalists in this category will also be invited to a cook-off as part of the judging process.
In their application, entrants must tell us:
- What is your wet:dry split?
- What is your cooking style?
- What is your training and experience?
'Vital cog'
The Morning Advertiser editor Ed Bedington said: “Chefs are a vital cog in the modern day pub operation and should be celebrated in their own right.
“Pub food has changed considerably as pubs have diversified to take on other eating-out venues in an increasingly crowded market, bringing fresh thinking and creative ideas to their dishes.
“As the chef recruitment crisis continues, it is equally important to champion young chefs working in the trade and encourage others to follow, which is why this year we are searching for talented chefs aged between 18 and 25.”
