Tom Kerridge to open third Greene King pub

Celebrity Michelin-starred pub chef Tom Kerridge is set to open his third gastropub, Greene King Marlow pub the Butcher’s Tap, in a bid to “bring the high street alive again”.

The new venture, plans for which The Morning Advertiser (MA) revealed last year, will be the chef’s third site alongside the Coach and the two-Michelin-starred Hand & Flowers, all in Marlow, Buckinghamshire.

Kerridge is working on the new site, which is set to open this November, with friend and butcher Andy Cook, as well as pubco Greene King.

The new venue will pair a butcher's and public house into one, by working as a fully functioning butcher's shop and a bar during the day, before being turned into a meat-led gastropub post-5pm.

Understanding of meat

Butcher Cook, who supplies Kerridge’s two other sites, will bring his understanding of meat into the kitchen.

The project is also the first joint venture launch for Greene King, which MA understands will be followed by more.

Head chef Nick Beardshaw described the pub's cooking as being 'all about deliciousness' and revealed what it's like to work with Kerridge.

Of the new project, Kerridge said: “The quality of produce that Andy brings is uncompromising, and he’s a proper butcher.

“We want The Butcher’s Tap to be the heart and soul of Marlow, somewhere you can pop in every week for your usual order that we’ll have ready for you, but also a place you can have a pint and a hot pork pie straight out of the oven.”

The Butchers Tap

The Butchers Tap will celebrate meat, including British classics such as braised faggots and hot pots as well as homemade pies, Scotch eggs and sausage rolls.

It is a “no-frills” venue that will serve simple, British food and drink, according to those behind the concept.
