Chez Bruce chef to lead kitchen at new London gastropub

A chef who cooked at some of London’s top eateries will take up residence at a new pub in Deptford later this month.

Chef Olly Marlowe, who previously worked at Michelin-starred restaurants the Glasshouse and Chez Bruce, both in London, will lead the kitchen at the Brookmill pub, which will open on Tuesday 30 August.

Dishes are reportedly set to include cauliflower tempura with raisin raita, curried quails' eggs, watercress and almonds; cherry and frangipane croustade with vanilla ice cream; roast Cornish cod with ‘nduja risotto, salted almonds, aioli and pecorino; and ham hock and gruyère pie with onion purée and roasting juices.

The Brookmill will be sister pub to West Norwood site, the Great North Wood. It will serve a range of craft beers from breweries including Kernel and Brick Brewery as well as natural and organic wines.

High-profile openings

The Brookmill is the latest in a series of high-profile gastropub openings announced this year.

Emily Watkins, chef-patron of the acclaimed Kingham Plough, Oxfordshire, opened the Carew Arms with A Hedonist's Guide... founder Tremayne Carew Pole in Antony, Cornwall, in July.

Watkins took on a consultant chef role for the site, working with head chef Jack Clayton to create a 'field-to-fork' menu featuring dishes such as hake with chorizo and warm potato and fennel salad; and spaghetti with artichokes, mussels and cider.

TV star

Celebrity chef Simon Rimmer opened Merseyside gastropub the Viking earlier in the year, the second venture for his Flying Pig & Lobster pub company.

Unfortunately for Rimmer, the site was broken into and burgled just days after it opened its doors to the public.

Also yet to open is the Oxford Blue, an upcoming Berkshire gastropub from chef Steven Ellis, whose culinary credentials include stints at the triple Michelin-starred Restaurant Gordon Ramsay in London and Andrew Pern’s iconic Yorkshire eatery the Star Inn at Harome.
