Top Portuguese chef to cook 'nose to tail' dinner at London pub

High-profile chef Nuno Mendes is set to cook a five-course meal based on Fergus Henderson’s revered British cookbook Nose to Tail Eating at Hackney pub the Marksman later this month. 

Mendes, of Chiltern Firehouse and Taberna do Mercado fame, will serve the five-course menu at Tom Harris and Jon Rotheram’s pub, which came 11th in this year’s Top 50 Gastropubs, on 26 July.

The meal costs £75 per head and includes a drinks pairing.

Guest chefs

This is the most recent of a series of cookbook dinners hosted at the Marksman, with previous guest chefs including Nathan Outlaw of double Michelin-starred Restaurant Nathan Outlaw and Lee Tiernan of Black Axe Mangal.

London boozer

Harris and Rotheram took on the Marksman in May 2015 with the aim of turning it into a "proper London boozer" and maintaining it as a pub where locals could pop in for a pint.

They said: “We wanted to keep the heart and soul of the Marksman while giving it a much-needed overhaul.”

Dishes currently on offer include chicory with pickled quince, hazelnut and Harbourne blue cheese, cured red mullet with fennel and Bergamot and braised short rib with celeriac and pickled walnut.
