TV presenter takes chef role at new Cornwall pub

TV presenter and 'food entrepreneur' James Strawbridge has taken on the role of executive chef at a new pub.

Strawbridge, founder of the Posh Pasty Company, will oversee the food offer at new St Austell Brewery site Havener's Bar & Grill in Fowey, Cornwall.  

He has presented two series of ITV show The Hungry Sailors as well as Saturday Farm and has co-written a series of books on artisan crafts, preserving food and 'traditional skills' called Made at Home. 

Informal dining

The 200-cover site will offer 'informal, modern dining and drinking' as well as accommodation.

Sample dishes are set to include ham hock sinkers with deep-fried mustard panko, watercress and dill pickles; butter grilled lobster tails with seaweed, Cornish pastis, samphire and caper focaccia; and smoked duck breast with Manuka wood chip, pear and rosemary focaccia, fennel and celeriac.

The pub will also offer Surf 'n' Turf Specials including Havener's Gumbo with Cajun spices, smoked sausage, squid, whitefish, cornbread poppers and grits; and beef and oyster burgers with West Country beef, tempura fried oysters and green apple salsa.

Managed estate

St Austell Brewery acquired Havener's, formerly Food for Thought, in 2015 to add to its managed pub estate.

The company recently announced it would reward staff with pay bands after profits and customers satisfaction across its estate hit record heights.

Complaints across the portfolio fell by 51% over the past year while online surveys report satisfaction levels had risen to 78%.

Additionally, the company's managed estate turnover increased by £4m in the same period with net profit increasing by £660,000.
