Star Pubs & Bars pumps a further £75,000 in chef training

Star Pubs & Bars will pump £75,000 into its food chef consultancy programme, rolling it out to 100 licensees, following its success in 36 pubs in 2015.

The announcement follows a £250,000 investment into the launch of the programme last year, which aimed to push food in the pubco’s sites up to 50% of sales. Support will focus on driving sales and will be tailored to each pub’s needs.

“It will help licensees with every kind of food business from those with fledgling offers looking to expand to those who have built big, established food operations,” Star said.

Chefs will spend a minimum of two days working with licensees and their kitchen teams.

One of five pub food issues

Each pub’s training will be different, but will address one of five pub food issues, including: menu development and new menu training; modern food presentation techniques; food quality and speed of service during peak trading times; increasing gross profit and yield control; and kitchen standards.

Lawson Mountstevens, MD of Star Pubs & Bars, said: “Success is not just about delivering great food; it’s about making food a profitable income stream, generating maximum sales for licensees.

"From kitchen ergonomics to supplier negotiations, it’s an incredibly complex and challenging area, especially for licensees without a catering background.”

Eastfield Inn, Bristol, licensee Graham Anderson received chef consultancy training in 2015 and said: “This type of training is really good, particularly so for pubs that are just starting up, struggling with their food offer or changing it in some shape or form.”
