The programme, which consists of peer-to-peer mentoring and bi-annual one-day workshops, is aimed at creating structured career development for the Kent-based brewery’s chefs.
Simon Howlett, head development chef at Shepherd Neame, said: “The interactive workshops are jam-packed with information around a central theme.
'Fully equip chefs'
“Coupled with the mentoring programme, our goal is to fully equip our assistant chefs with all the tools and knowledge not only to develop their own skills but also to share best practice within their own teams.”
Shepherd Neame also plans to partner with the Beef and Lamb Agricultural and Horticultural Development Board in order to train a number of chefs to butcher, prepare and cook select cuts of meat ahead of winter steak and Sunday roast sales.
Meanwhile, fellow pub company McMullen & Sons has recognised the first eight team members to complete its new Silver Award for Kitchen course.
Building chefs' capabilities
The course, aimed at building chefs’ capabilities and aiding their progression up to assistant kitchen manager, involved courses in stock management, managing peak shifts, food hygiene audits and front-of-house, as well as leadership, gap management, advanced kitchen skills and managing food safety.
