The seven-strong group, led by award-winning licenses Simon and Sarah Bailey, acquired two pubs from Orchid’s Dragon brand in February. It has since rebranded existing pubs the Waggon & Horses in Surbiton and the Kings Arms in Epsom to the brand.
Simon Bailey told M&C the move came out of a search for a new direction for the pubs’ culinary offer.
He said: “When we started out we were the only ones doing a quality burger in a pub but suddenly everyone started doing it so we needed something new. We were looking at a sourdough pizza concept – even got the branding designed but then the Orchid pubs came along and it seemed like a better proposition.
“It’s proved really popular – it’s a cuisine that people are familiar with but isn’t everywhere yet.”
On the move to delivery, Bailey said: “There seemed to be a demand so over the summer we gave it a go. To start with it was me and my ops manager doing the delivery because we wanted to gauge the logistics of it.
“Over the winter I expect demand to really ramp up.”
