Heston Blumenthal has named a new head chef at his Michelin-starred pub the Hinds Head, in Bray, Berkshire.

Hungarian-born Janos Veres is promoted into the role from senior sous chef following the departure of Kevin Love, who left to open a pop-up restaurant.

Veres, who graduated from the Ferenc Hansági​ Technical and Professional School​ for Catering in Szeged, worked at the four-star Danesfield House Hotel and Spa, in Marlow, Buckinghamshire, for more than four years before joining the Hinds Head.

He is now tasked with heading up the kitchen at the pub that has been owned by Blumenthal since 2004.

Veres said: “I know 2015 will be an exciting year ahead for me and my team. I’m looking forward to continuing developing new dishes for 2015, so please keep an eye out.”

Top 50 placing

In addition to the Michelin star, the Hinds Head holds two AA-Rosettes and was 13th in the Top 50 Gastropub Awards 2014.

Love, who became head chef at the Hinds Head in 2010, opened Deluxe in London’s Spitalfields for a four-week period before Christmas.

Describing his concept has a ‘non-restaurant’, Love supplied diners with recipes of their food following each meal.

Menu items included smoked reindeer with pickled blackberries, and tagliatelle with lobster and truffle channels. Deluxe also updated its menu each week with new dishes voted by the public.

In a separate development, operations director Simon King has left the Fat Duck Group to work for restaurant group Union Square, which is based in New York. King’s role is not being replaced.
