Award-winning pub operator David Barnard has just opened the Fish House in West Sussex, following a £4m redevelopment.

Barnard, operator of the Crab at Chieveley and before that the Crab & Lobster restaurant and Crab Manor hotel in Thirsk, has spent the past year and more than £4m lavishly refurbishing the Chilgrove White Horse in West Sussex into the Fish House.

The Fish House is a bar, restaurant and hotel located near Goodwood and just outside Chichester.

The building was completely refitted and largely rebuilt — 15 luxury bedrooms were added, each named after a famous fishing port from around the world.

The grounds have been extensively landscaped and include six large secluded hot tubs, each set in their own private pagoda, complete with flat-screen TV and Champagne fridge.

Alan Gleeson is the head chef, and will focus on producing high-quality food from fresh ingredients. The restaurant seats 40 and is decorated with Italian chandeliers and hanging wall art by John Holt.

The bar area has a "show-stopping crustacean counter", as well as low ceilings and a 300-year-old French fireplace.

Barnard said: "It has been thoroughly rewarding to witness the realisation of my vision for the Fish House.

"Surrounded by a fabulous team and a brigade of superb craftsman, we have succeeded in creating the most wonderful backdrop for what I truly believe will be one of life's memorable experiences.

"The Fish House will be elegant indulgence, operating at the highest of standards."
