Experienced operators Alister Dwelly and partner Lisa Docherty have just taken on their fourth site in north Cornwall. The Archer Arms is a community pub in the village of Lewannick, popular with locals as well as the odd holidaymaker. Dwelly will look after the back of house, which accounts for 35% of the business, and Docherty will oversee the bar.

Dwelly said: "I don't want

to change much, just keep

things traditional and maybe extend the dining area. Coming straight from

a tied pubco site, it's refreshing to be getting beer at a decent price. We're 65% wet led so it makes a massive difference."

The bar always has one real ale, currently Sharp's Doom Bar, brewed just down the road at Rock. The ale is served straight out of the cask and is on view at the bar. The food offer is in line with Dwelly's philosophy on pub food — that pub food should be pub food and less straight-forward cooking should be left to restaurants. He has devised a menu of simple pub dishes, including home-made lasagna and bangers and mash.

Dwelly's long-term plans include turning some of the upstairs rooms into letting bedrooms to capitalise on the inquiries for accommodation he has received since taking on the pub two weeks ago.
