Cornish Albacore Tuna with Runner Beans, Shitake Mushrooms, Cherry Tomatoes, Toasted Sesame Dressing

Ingredients:
- 120g Albacore Tuna Loin
- 60g Runner Beans
- 3 Cherry Tomatoes
- 1 tsp Sesame seeds
- 1 tbsp Sesame Oil
- 1 tbsp Soy Sauce
- 20g Shitake Mushrooms
- Salt, Pepper
Method:
1. Trim and blanche 60g of sliced runner beans in lightly salted boiling water for 45 seconds, drain and refresh in iced water.
2. Slice three cherry tomatoes in half
3. Toast 1 tsp of sesame seeds in a dry pan. Remove the pan from the heat, add 1 tbsp of sesame oil and 1 tbsp of soy sauce and mix together.
4. Drizzle the Cornish Albacore Tuna with oil and season well. Heat a pan to smoking point, place the tuna in a pan and sear for 30 seconds on each side. Allow to rest for 2 mins. This will give a rare, cook for longer for a more medium to well done tuna.
5. Heat another pan to smoking point with a drizzle of vegetable oil add the cherry tomatoes cut side down. Cook for 30-45 seconds, remove the pan from the heat, add the runner beans, shitake mushrooms half of the dressing and toss together gently.
6. To serve, arrange the beans, mushrooms, tomato towards the back of a large clean plate, spoon over the remaining dressing, cut three slices from the Tuna loin, place the whole part of the loin on the plate in front of the vegetables and lay the 3 slices as if they have been sliced from the loin.
