Seasonal menu autumn: Spicy Chorizo and Leerdammer pizza

1x35cm ready-made pizza base

300g Leerdammer cheese, grated

400 jar of mixed roasted vegetables

100g chorizo, sliced250g tinned tomatoes, diced

2 cloves garlic, peeled and chopped

half a chilli, chopped

olive oil

rock salt

ground black pepper

2 sprigs rosemary

Method

1 Pre-heat oven to 200ºC/400ºF/Gas 6. Using a sharp knife, carefully cut pizza base in half horizontally to make two thin, round pizza bases.

2 Place in oven for four to five minutes to colour.

3 Place tomatoes, chilli and garlic in blender and mix to purée. Liberally sprinkle roasted vegetables over the top.

4 Sprinkle with Leerdammer cheese and slices of chorizo, season well and drizzle with olive oil. Sprinkle sprigs of rosemary over top.

5 Put pizza back in oven for about 10 minutes. Remove from oven as soon as Leerdammer has melted and serve.

Tip: Roasted vegetables, such as mushrooms, aubergines and pepper are also available from delicatessen counters. Alternatively, buy packs of fresh, mixed vegetables marked 'ready to roast' and cook them yourself. Why not try experimenting with different vegetable combinations topped with Leerdammer grated?

For a vegetarian alternative, omit the chorizo sausage and add 40g of Leerdammer cheese.
