The idea: As head chef and joint owner of the Olive Branch, Sean Hope wanted to create a cook book that would provide an insight into what the pub stands for - a philosophy of sourcing the freshest and best local ingredients to create good quality, traditional and innovative pub food at reasonable prices.

How it works: Entitled Full English and Other Pub Recipes, the book contains 44 pages of Sean's tried-and-tested recipes, together with profiles of the pub's suppliers and user-friendly tips to enable readers to have a go at home. Recipes include venison casserole with tarragon and juniper dumplings, warm goats' cheese salad with fresh figs, roast pork chop with black-pudding mash and apple fondant, and oven-baked apple tart with cinnamon clotted cream. "It is all about simplicity and local produce," Sean explains.

How is it promoted: The book is sold at the Olive Branch, sister pub the Red Lion in Stathern and the Olive Branch's bed and breakfast Beech House, Sean has also enlisted the help of several local

businesses to sell the book. At £5.50 it is intended as a keepsake

for customers who have visited the Michelin-starred pub and

is a useful marketing tool for

the business. Sean plans to develop a selection of seasonal recipe books.

Top tip: "Writing a cook book is not for the faint hearted," says Sean. "Think about the purpose of the book before you start and be prepared to give it your heart and soul."
