Michelin-starred chef Mike North has purchased the freehold of the Nut Tree at Murcott, Oxfordshire, with his partner, Imogen Young.
North was head chef at the Goose in Britwell until March 2006. The pub won a star in 2005 and 2006, but lost it this year.
North said: "We left the Goose because we wanted our own project.
"It closed for significant refurbishment after we left, so I'm not surprised that it lost the star.
"But now it has a fantastic new team and I think it will win back the star in its own right.
"We use the very best ingredients that we can and cook them as well as we can, whil e maintaining a pub atmosphere."
The food offering at the Nut Tree will be similar to those at the Goose.
North describes the pub menu as "modern British with classic pub dishes and seasonal, local produce".
Dishes include such starters as grilled scallops with celeriac purée, bacon and cep powder (£8); mains include slow-roast belly of Oxfordshire pork with apple purée (£15) and desserts offer mandarin soufflé with hot chocolate sauce (£5.50).
North and Young plan to introduce a kitchen garden and rear their own pigs in the 3.5 acres of land attached to the pub.
They also have planning permission for letting rooms at the Nut Tree and are busy refurbishing the commercial kitchen.
"Including the cost of the freehold, stamp duty, legal fees and the entire kitchen re-fit, we have paid about £1m for the Nut Tree," added North.
