The Three Fishes arrived on the pub scene two years ago when restaurateurs Craig Bancroft and Nigel Haworth opened the country roadside inn which had been empty for several years.
The duo used their skills honed at their sister establishment, the Michelin-starred restaurant Northcote Manor near
Blackburn, to create a gastropub with a distinct difference.
Chef Haworth is a virtual martyr to local food sourcing and prides himself on
creating a menu which excels in local
produce at every turn.
All 30-odd food suppliers from the north west are lit up in lights on the back of the pub's menu which comprises favourites cooked with subtle twists which makes the best of the countryside fare on offer.
"Our suppliers are the stars of the show, I just put the thing together," says Haworth.You can get an assortment of traditional dishes made up of meat and seafood here but despite the advances in gastro
cooking, it is the humble battered deep fried haddock, marrowfat peas, chips and tartar source which is the star turn.
The Three Fishes' dining tables fill up fast as soon as the doors open, testament to the quality offering the pub has brought to the north west dining scene.
Locally-brewed Thwaites cask ales plus a changing guest beer sourced from regional breweries flag up the drinks.
"It's been an incredible journey so far and something which we could truly never have anticipated when we opened the doors," says Morris.
