The first is the Quattro QPM20, a big, beefy planetary mixer competing in the 20-litre bowl capacity market. Built using the latest manufacturing techniques, it still features a "number 12" hub, making it compatible with accessories from
traditional brands, a godsend for caterers needing a new mixer but not looking to replace their current attachments.
Ideal for every type of high volume mixing, its cooled 0.5HP electric motor operates at three speeds (106,197 and 359 rpm). In a steel and stainless steel finish, its price of

Also from Apuro is the Ital TM1 Vegetable Cutter. With four blades as standard - slicing, serrated slicing, grating and julienne - this cutting edge technology is ready to go, with no need to purchase separate blades to get started. However, optional specialist attachments can be fitted for added versatility. Incorporating a stainless steel cover for easy cleaning and blade changing, the TM1 is capable of cutting up to 220kg per hr.
Weighing in at 25kg, the machine takes up 510 x 280 x 460mm on the work surface.
New from Magrini is the Pacojet, a unique system capable of processing natural ingredients to an ultra smooth texture, making it ideal for producing sorbets, ice cream, mousses, fine pâtés or vegetable and herb concentrates for soups and sauces. Each bespoke recipe is placed in a pacotising beaker and frozen to -20°C, locking in freshness and aroma without the need for preservatives or additives.
When ready for use, the beaker is placed in the Pacojet machine, which uses a high-speed blade to shave the contents, resulting in a creamy, very finely textured end product. Since this does not disrupt the freezing chain, there is never any waste, as partially-used beakers are simply put back into the freezer to be reprocessed as necessary.
Pacojet has a list price of £1,995+VAT, which includes 10 pacotising beakers.
Extending the versatility of the machine further is the optional Coupe set, costing £165 and consisting of both two and four-blade cutters as well as a whipping disc. However, unlike the regular application of the Pacojet, which processes food from frozen, these tools are used to process in the ambient state.
