We ask pub chefs what the best-selling sandwich is on their pub's menu:

Chef: Philip Ham.

Pub: the Antelope, Hazelbury Bryan, near Sturminster, Newton, Dorset.

Best selling sarnie: Bacon and avocado ciabatta with side salad (£3.95).

How you make it: Chop a ripe avocado and combine with mayonnaise. Cook and dice bacon add to ciabatta and squeeze lemon juice over.

Why it is popular: "Lots of people love avocado and it goes very well with the bacon."

Chef: Gareth Davies.

Pub: the Windmill, Adlington, Cheshire.

Best selling sarnie: Steak & Cropwell Bishop Stilton with red onion on granary bread, side salad and coleslaw (£6.95).

How you make it: Pan-fry the steak and red onions and assemble on the toasted baguette. Finish off with Dijon mustard.

Why it is popular: "Steak and Stilton go together so well."

Chef: Sam Wydhams.

Pub: The Coastguard, St Margaret's Bay, Kent.

Best selling sarnie: Toasted prosciutto ham and cheese panini with salad (£5.50).

How you make it: Fill the panini and grill.

Why it is popular: "We run a different panini filling each lunch. If you want to build repeat custom you've got to offer something different."

Pub: The Sorn Inn, Sorn, Ayrshire, Scotland.

Best selling sarnie: Roasted cherry tomato, fetacheese and rocket bruschetta (£5.50).

How you make it: Fry off cherry tomatoes, sugar, feta cheese and rocket. Add to toasted olive and garlic bread.

Why it is popular: "I think because people want to eat lightly at lunch. And if people are coming to the pub for the first time then they tend to stick with something they know, like a sandwich."

Pub: the Williams Arms, Braunton, Devon.

Best selling sarnie: Williams Arms BLT with chips, homemade chutney and salad (£4.95).

How you make it: Fill a fresh baguette with slices of grilled bacon, wafer thin turkey, Cambozola cheese, cranberry sauce and salad.

Why it is popular: "Because it's different. People are expecting it to be the standard bacon, lettuce and tomato but when they find out about the turkey, it's a real talking point."
