Dishes created by four Manchester catering students are being served up to customers at Hydes pubs around the city. The brewer challenged City College Manchester to come up with a new dish using its flagship beer brands, Jekyll's Gold and Manchester's Finest.

Catering students submitted their recipes, from which four finalists were chosen for a "cook-off" at the college.

Although one final winner was chosen, the quality was so high that Hydes catering team have decided that all four finalist recipes will now become part of the food pubs' "specials". In first place was Johan Lemmers with brewers stew with mustard grain mash, second was Peter Irlam with meatloaf with golden shallots and three beers, Jamie Ward with beer-braised Barnsley chop was third and Don Kinsey came fourth with breast of turkey with orange, apricot and beer stuffing.

The students were presented with prizes of personalised chefs' whites, knives and vouchers to dine in Hydes pubs of their choice. Their recipes will remain on the Hydes specials boards for a minimum of three months.

Hydes catering manager Jimmy Cooke said: "The brewery has an ongoing relationship with the college and was delighted with the quality of the competition entrants.

"It is wonderful to see such talent coming through the college as it is this local talent that will be essential to our business moving forward.

"We take great care in the selection of dishes for our pub menus, and look forward to seeing what our customers think of these new additions."
