Ingredients:
- one jar Uncle Ben's sweet and sour culinary sauce
- 2.3kg pork, cut into 3.5cm strips
- 260g red pepper, cut into 3.5cm strips
- 260g green pepper, cut into 3.5cm strips
- 260g onion, cut into 3.5cm slices
- 260g carrot, cut into 3.5cm batons
- 260g celery, cut into 3.5cm batons
- two bunches spring onions, sliced at an angle
- 200ml oil
For the marinade (optional):
- 900ml light soy sauce
- 30g fresh root ginger, finely chopped
Combine the marinade ingredients, pour over the meat, mix well, cover and marinate over night in a fridge.
Stir fry the vegetables (in batches) in a small amount of very hot oil then leave to one side.
Stir fry the pork until cooked or place on baking sheets and cook in a preheated oven 200°C for 20 minutes. Drain off any excess liquid.
Meanwhile, heat the sweet and sour sauce in a clean saucepan. Add the meat and vegetables to the sauce, carefully combine and place in a serving dish. Garnish with the spring onion and serve with rice.
