Tony Carson has parted company with Noble House to pursue other business ventures including the roll out of restaurant brands across North America.
His departure had been mooted for some time but Mr Carson finally left the pub and restaurant business last week.
He is thought to have amassed a personal wealth north of £8m through founding and building the Taipan Taverns brands, acquired by Noble House in 2000.
Mr Carson, 46, will walk away with the overseas rights for Jim Thompsons and Yellow River Café - Noble House struck a franchising deal with MagiCorp Entertainment last summer to roll out the concepts in North America and south-east Asia.
Mr Carson has also taken non-executive chairman positions with two restaurant groups. The first, ComCatCo - Committed to Catering in your Company - runs 50 restaurants, including Burger King and Kentucky Fried Chicken franchises.
"Many are in big retail shopping centres," said Mr Carson. "These type of outlets can often by quite dowdy so we have an opportunity to create new, exciting brands."
The second company, Eat Your Heart Out, has six restaurants and manages a further six on behalf of private investors. It also has a consultancy arm - clients include Charles Wells, Laurel and Scottish & Newcastle.
"It's time to get back to things that titillate me. I have done my bit at Noble House, which was creating brands. I don't want to be part of a production line replicating brands over and over."
Mr Carson said he will continue to look for other pub and restaurant investments. "There is plenty for me to get my teeth into," he added.
The restaurant entrepreneur remains a shareholder in Noble House Pub Company.
