The nationwide roll-out of London's Lime bar begins this year with the opening of two new outlets in Manchester.

Lime Entertainments is opening a 8,500sq ft outlet under the Lime name in Booth Street, near Albert Square, in July, with a bar and restaurant on the ground floor and bar and dance area, called Sublime, in the basement.

A third Lime is due to open in October opposite the Lowry Centre in Salford Quays, before the company looks for further sites in towns and cities across the UK.

The first Lime was opened in Curtain Road, between Shoreditch and the City, over a year ago by Grant Targett-Navarro and David Vanderhook, who also own the Lounge Bar & Grill in Godalming, Surrey.

The Lime brand was created by Waterloo-based Zynk Design Consultants, who have developed the concept for the new Manchester outlets. The design includes a vibrant colour scheme and solid walnut and stainless steel bars.

Clinton Pritchard, of Zynk Design, said: "We have deliberately mixed styles and tastes so that it is whatever somebody wants it to be, whatever time of day they come."

The bars' cocktail list, which was put together by Grant, is made up of classics such as the Manhattan and Mai Tai plus a range of different Martinis, Daiquiris and champagne cocktails.

The modern European food menu was put together by David, who was a private chef to the rich and famous, such as King Hussein of Jordan, the Aga Khan and Sir Evelyn de Rothschild.
