Pies are a popular pub classic, so the Lock In takes a look back in time to the history of the pie with food historian Sam Bilton, we also talked about what makes a pie and flavour innovation with co-founder of PieMinster Tristan Hogg.

When it comes to producing award winning pies, we spoke to Paul Capener of Pauls Proper Pies, the winner of Pub Pie of the year at the British Pie Awards and chairman of those pie awards Dr Matthew O’Callaghan. And we got some operational insight from Fuller’s Admiralty head chef and pie guru Jon Pellew and owner of the Piebald Inn, Jon Allen who offers 52 varieties of pie.
